Pulled Pork Burger

Ingredients


Pork shoulder

Pork mince

Mayonnaise

Dill pickles

Bacon

Ketchup

Onions

Batter

Butter

Brown sugar

Burger buns

Bacon

Cheese

Garlic

Bread crumbs

Method

Rub the pork shoulder with your favorite pork rub


Cook the shoulder over Aromachef Hotrox , Aromachef Lump and Apple wood at 250F/121C until it has a nice color spritzing every hour with apple juice.


Then wrap the shoulder in tin foil, add brown sugar and butter to the top of the shoulder before wrapping . Cook until it reaches an internal temperature of 204F/96C remove from the BBQ and rest for a good hour or 2 . Then pull the pork and mix in your favorite BBQ sauce.


Pork Patties

Makes 5 - 6 patties


500g minced pork

1 med onion, finely chopped

1 clove of garlic, crushed

1 cupful of fresh breadcrumbs

1 small egg, beaten

2 tsps fennel seeds, crushed with a pestle and mortar

1 small red chilli, finely chopped

1/2 tsp black pepper

Salt


Method

1. Place the onion and garlic in a small bowl, drizzle with a few drops of olive oil then cover with cling film. Place in a microwave on high power for about 2 mins or until onions are soft. Allow to cool completely.

2. Place the minced pork in a large bowl and add the rest of the ingredients, including the onions.

3. Mix using your hands then form into patties (5 -6 patties).

4. Grill, barbecue


In-N-Out Burger Sauce


1/2 cup mayonnaise

3 tablespoons ketchup

2 tablespoons finely chopped Dill pickles

1 1/2 teaspoons sugar

1 1/2 teaspoons distilled white vinegar


In a small bowl, combine all of the ingredients together and season with salt and pepper to taste. Refrigerate overnight before using.


Onion Rings


3 large onions, sliced into 1/3-inch rings

1 cup sifted all-purpose flour

1 cup buttermilk

1 egg, beaten

1/2 teaspoon baking soda

1/2 teaspoon salt


Soak onion rings in a bowl of ice water for 1 hour; drain and pat dry with paper towels.

Whisk flour, buttermilk, egg, baking soda, and salt together in a bowl until smooth.

Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

Dip onion rings in batter, working in batches; fry battered onion rings in the hot oil until browned, about 5 minutes. Remove with a slotted spoon and drain on a paper towel-lined plate.

From the bottom bun up add:

In N out sauce

Pulled pork

Sliced dill pickles

Pork pattie

Cheese

Onion rings

Bbq sauce

Bacon

Onion rings

More lashings of BBQ sauce and In N out sauce

Top bun.
